
Hello CSA members!
Where in the world did August go? It seems like only yesterday we were distributing the first tomatoes of the season. The hasty weeds are finally slowing down, the newly-seeded cool weather greens are popping their heads out of the dirt, Fall seems to be on the horizon (though these hot days have our crops in need of some rain soon!), and we are in the thick of tomato season. To celebrate, I’d like to share with you two tomato recipes I love.
The first is called shakshuka. This classic recipe features eggs cooked in a spiced tomato sauce that you eat with pita bread. It’s truly delicious and will be an excellent way to use those hot peppers, garlic, and parsley you’ve been receiving in your share. The next recipe is something I grew up eating: Tomato Pie. It’s a savory pie with tomatoes, cheese, and herbs. How could you go wrong? Here is a great recipe for it from Simply Recipes: http://www.simplyrecipes.com/recipes/tomato_pie/
